Health Benefits of Vitamin E and Carotenoids

Abstract
High dietary intakes of vitamin E and carotenoids have been associated with decreased risk of several different diseases. Vitamin E(a-tocopherol and its acetate and succinate esters) is the most effective chain breaking lipid-soluble antioxidant in the human body. Evidence is rapidly mounting that consuming more than 100 I.U. per day of vitamin E results in a significant reduction in cardiovascular disease. tein, zeaxanthin, cryptoxanthin, and lycopene) are mix- age-related
of carotenoids which mimic the carotenoid com-
position of a healthy diet rich in fresh fruits and vegetables. Epidemiological evidence shows this type of diet reduces the risk of several types of serious disease, particularly cancer. Protection against specific diseases has been associated with high dietary intakes of individual carotenoids. Specifically, alpha- and beta-carotene have been shown to be protective against lung cancer, lycopene reduces the risk of prostate cancer, and lutein and zeaxanthin appear protective against
macular degeneration.
